Southwest Salad with Chicken

Southwest Chicken Salad - all the flavor of your favorite restaurant salad, half the fat and calories! This is one the whole family will adore

Serves 4

3 chicken breast cutlets
Mixed baby green salad mix (2 cups per person)
Lowfat ranch dressing
Your favorite bbq sauce
1 C frozen corn, thawed
2 oz cheddar cheese, shredded
two handfuls tortilla chips, any type
lime juice
cumin
sea salt
cracked black pepper
cayenne pepper

Heat a stovetop, electric or outdoor*grill to medium high heat. Season chicken on both sides with lime juice, cumin, sea salt, cracked black pepper and cayenne pepper. Place chicken on the hot grill for 5-7 minutes and then flip to cook the other side. Once chicken is grilled, set aside to rest while you throw the thawed corn into the grill pan (you may also put a small nonstick saucepan on your outdoor grill to heat the corn slightly). Plate 2 cups of greens on each plate. Drizzle a little more lime juice over the corn to help it pick up the seasonings of the chicken, if you are doing it in a saucepan, add a shake of all the seasonings to the corn. Cook about 2 minutes, add 1/4 C corn to each plate. Cut chicken cutlets into thin strips, split among the plates. Sprinkle 1/2 oz shredded cheese on each salad, drizzle 1 tbsp lowfat ranch and 1 tbsp bbq sauce on each salad. Crumble tortilla chips over each salad.


*If you're using a gas or charcoal grill for this recipe, I'd recommend spraying the grill space with a nonstick grill spray and also placing a stock pot cover on the area where the chicken will be cooking until you're ready to grill. The stock pot cover really helps concentrate the heat which will minimize sticking. Chicken cutlets are so delicate, you don't want to lose them to a sticky grill surface.
