Have you seen that Wal-Mart commercial that's played about every hour on any given TV channel with the moms and their great football recipes they made with stuff they got at Wal-Mart?
Well that football-shaped dip keeps catching my eye. Although no one says what it's made with on the commercial, I think I have a pretty good idea. I decided it's something I'm going to use at my boyfriend's next football party. You can make it, too! I decided to name it First Down Dip.
First Down Dip
3 ripe avocados
lime juice
sea salt
1/2 head romaine lettuce, coarsely chopped
3/4 cup medium salsa
2 cans fat free refried beans
4-5 tbsp fat free sour cream
one small plastic ziploc sandwich bag
Scoop out the avocados, mash in a bowl. Add sea salt and lime juice to taste, refridgerate covered with plastic wrap. Hint: if you're going to make this ahead of time, keep the pit in the bowl of guacamole and cover tightly with plastic wrap until you're ready to use. Use within 48 hours.
Remove the beans from the can and scoop into a mixing bowl, combine with salsa.
On a large serving platter, spread out the chopped lettuce. In the middle, start spooning the bean/salsa mixture into an oval shape. Shape with a spoon or spatula so it looks like a football. Around the border of the football, place the guacamole. Spoon the sour cream into a small ziploc sandwich bag and snip a very small hole with a scissors in the corner. "Pipe" sour cream in the center of football so it looks like laces.
Serve with baked tortilla strips/chips or vegetables, or use with two serving spoons as a centerpiece for a taco bar!
