Ingredients
2-4 (depending on size and how hungry you are!) tilapia fillets - this recipe is also PHENOMENAL with salmon!!
1 bag fresh spinach or a box frozen spinach, thawed
1 clove garlic, chopped finely
1/4 cup balsamic vinegar
1/4 cup water
2-3 tbsp lemon juice
1 1/2 tbsp brown sugar
garlic powder, salt, pepper
optional - 2 strips bacon*
Heat the oven to 350 degrees.
In a small saucepan, mix vinegar, water, and 1tbsp lemon juice. Bring to a boil over med low heat, add brown sugar, stir, reduce heat to low and let simmer.
Spray a baking dish with nonstick spray and put in fillets. Spread remaining lemon juice over fish and then top with garlic powder, sea salt, cracked black pepper to taste. Bake for about 20 minutes or until fish flakes with a fork.
In a medium skillet, heat 1 tbsp extra virgin olive oil on medium heat, add garlic and sautee until fragrant. Add spinach in batches, allowing it to wilt into the pan prior to adding more. Cook, reducing heat as necessary, until spinach has lost most of its moisture and has begun to brown slightly. *If you're using bacon, sautee the bacon until nearly crisp before adding garlic, no extra oil is necessary.
Meanwhile the vinegar mixture should be reducing down to a syrup. Once it thoroughly coats the back of the spoon you've been stirring it with, take it off the heat and let stand about a minute. It will thicken more as it cools. Plate fish over spinach, and drizzle with balsamic syrup.
