Preheat oven to 400 degrees.
Cut potatoes thinly on each side to form a square-ish shape. Cut 1/4 inch strips across the widest part of the potato then slice vertically to "julienne" the potatoes
Put potato strips in a bowl, drizzle canola oil or extra virgin olive oil and toss potatoes to coat. Spread out on a foil covered baking sheet sprayed lightly with nonstick spray, and toss spices over all of the potato strips. Sea salt, cracked black pepper, and garlic powder (NOT garlic salt!). Cook until crispy, about 25-30 minutes. There shouldn't be much of a need to turn the fries, just let them cook until they're golden brown.
Making these for breakfast? They'll cook faster if you make small cubes out of the potatoes. Once they're out of the oven, toss a few drops of hot sauce and ketchup over the group, serve with your favorite breakfast.
